Fish in Gran Canaria, Canary Islands, Spain is without a doubt the most popular dish. Obviously being surrounded by the Atlantic Ocean is the main reason. The fish is undoubtfully delicious and always fresh. It is simply a treat to the taste buds.

Locally caught varieties include tuna, swordfish and sea bass, amongst others. They are often served with coriander or Parsley sauce.
If you're into fish you have to try the Sancocho; it's absolutely superb. It's made from stone bass or sea bream and is one of the island's most popular dishes. Fish stew is also very popular and you'll find it on most menus. Fish is often served with papas arrugada, which simply potatoes that have been boiled until the skin becomes wrinkled and dry.
The tradition of eating tapas (light snacks) has been imported from mainland. Nowadays, it's common to see people eating small dishes of meat or vegetables before the main meal. They are also served for free if you buy a beer (in some places).
Some meat dishes can be quite expensive in Gran Canaria as the meat has to be imported. Rabbit on the other hand is reared locally. It's delicious, cheap and very popular. It's also served with papas arrugada.
There are hundreds of restaurants on the island serving all types of cuisine, especially in the more touristy areas. The only problem is, they can sometimes be quite expensive and often cater to international tastes instead of serving authentic Canarian cuisine.
If you want to taste the real thing, look for the smaller establishments where the locals hang out and you’ll find it there. It's always a lot cheaper too.
Restaurants normally don't start filling up until around 9pm in the evening and people often stay on eating and drinking till well after 11.00pm.
